How to cook Okonomi-Yaki Osaka Style
Japanese Pizza

OKONOMI SAUCE
  • Mix Otafuku Okonomi -yaki flour and water in large bowl until flour fully dissolves.
  • Add cabbage, green onion and eggs to flour mixture and combine gently.

Helpful Hints:

Do not over mix!

If using seafood, lightly fried before mixing with vegetables.

 

INGREDIENTS (three 6-inch servings)
  • 1 cup Otafukumiyaki Flour
  • 3/4 cup water
  • 1/2 of large whole cabbage, shredded (about 4 cups)
  • 1/2 cup green onion, thinly chopped
  • 3 eggs
  • 1 Tbsp vegetable oil
  • 9 pieces of thinly sliced pork belly*
  • Otafuku Okonomi Sauce--season according to taste

Optional: Aonori seaweed, Katsuobushi (shaved dried bonito), and Mayonnaise

*If desire, use shrimp, squid, bacon or other meat.

  • Place oil in medium size skillet on medium-low heat. **
  • Divide mixture into three sections and shape each portion into a 1/2" thick patty.
  • Place patties in skillet and layer pork belly (or other meat) on top.
  • Cook approximately 3 minutes or until bottom side is lightly browned.

 

** If using an electric skillet, cook at 400° F

  • Flip patty to cook meat side (approximately 4 minutes or until fully cooked.)

 

Helpful Hint: When flipping, be careful not to flatten the Okonomi-yaki!

 

 

 

Okonomi-yaki flour

  • Flip patties once more (meat side up) and cook approximately 2-3 additional minutes.

Okonomi-Yaki represents the Japanese culture with about 19,000 specialty restaurants throughout Japan, and the recipe varies by region... like Hiroshima and Osaka have their own recipes using local ingredients and tastes.
